It's virtually impossible to recreate as most of it is based on pseudo-random operations. The sounds themselves or the organizing principles behind it all aren't necessarily that complicated.

Part of it has to do with their methods. They've been building up their Max/MSP tool kit for almost two decades now. I'm sure it's much easier for them to make things now than when they were starting out with Max, not just because they're better at it, but because they have thousands and thousands of hours worth of patches built up that are all modular and can be repurposed. I read through the watmm Q&A once and they said they reuse bits all the time.

They're also just really good artists obviously, but their built up Max library provides some level of minimum consistency I'd guess. As long as they chuck in samples that sound like Autechre, they'll get something that sounds like Autechre. This makes it all the more impressive that they continue to embark on major stylistic experiments like Oversteps, when it would be easy just to go on repeat forever. I wish they would go back to more involved song structures again though. Now it's just long slogs of one thing with maybe 1 major change in the middle of the track somewhere. I liked it when there was still more composition involved e.g. Untilted / Sublimit.
