If you want to have a good field recording it boils down to two main things (preferably both):
1. something interesting (the location or the subject has to hold interest, which varies greatly by listener)
2. immersion. the feeling that you're not just having a detached listen to a thing, but that you're actually experiencing it or it's unfolding in front of you or that it's happening to you.
I do field recordings as a hobby and although it's not always successful, when I put the effort in to accomplish both of the above points it really resonates with people. Even built some of my own equipment so the sound of my recordings is a little more specific to me (in terms of the stereo field and immersion).
