You'll have to have some form of income to feed the animals because one acre isn't much for even just a few cows. You'll also need to have some type of water source otherwise one dry spell will wipe out most of your produce and kill your livestock. Digging a well won't cover all that.
Go work on a farm and see how they're always a month from going in debt.

Our food systems are very inefficient, and most land is not being used to make food. We could grow all food underground or in sky scrapers dedicated to growing if we wanted.

The cost of using that would be about the same as tearing up the existing soil and replacing it with Iowa soil. after a couple of rounds of harvest you'd have to do it again. Small area farming is a hobby not a cost effective way to live.
