This doesn't exactly work out, for two reasons. First, the images have to be labeled ahead of time ("this is a crosswalk," "this is not a crosswalk") in order for it to be useful as a captcha. Second, there's already a way of finding labeled images, which is to look at metadata (including filenames) and page content, which we call "image search."
The reason we're identifying crosswalks and cars is much simpler: What's the largest corpus of images that Google actually owns, so that they don't have copyright disputes with their captcha system? Street View.

No bruv, the images are judged by multiple versions of ai in training, and multiple people. The bots that are closest to responding as human are tweaked and tested in more images, human trolls that go far off of the human response baseline are rejected. After millions of iterations you get a bit that is pretty good at knowing what a crosswalk looks like, or a car, or a street light. It doesn't know what the thing actually is, but can identify what it's asked to.
