Download a background recorder for your phone that let's you record without the screen display. Record in high res and walk around with it in your hand. Then take screenshots from the good clips and touch up in post.

Using a gopro (or equivalent) camera is useful due you can control with your phone remotely when to start/stop recording, and some models even you can see on real time wirelessly what are you pointing at.
Some 808 keychain cameras are fine too. There are several versions, check wich one records at HD
I personally dont recomend using your phone (although is very convenient) but in case of being caught the police can track you and and even deleting the video there are still camera records inside the phone that police specialist can use as a proof

Things to consider:
Get a cam that can collect a fair amount of light either by its lens/sensor combo or artificially with a wife iso range.
Beyond that get creative with the cam, less obvious the better. And last practice makes perfect, it really is trail and error.

I’ve got a couple scummy friends that used to creepshot. Every phone has a camera these days, a lot of people don’t suspect it if you’re just randomly holding your phone. Hell, try holding your phone at your side, it’s literally at ass height.
Shots like the one pictured can be done easily if there’s nobody watching. Also, recording videos instead of photos, allowing you to go through the individual frames and pull the best ones out.
