Actually, you build up tolerance to spicy foods pretty quickly. It's just a matter of having them as part of your regular diet, which americans typically do not.

I ate a lot of spicy foods this year and noticed some dishes were a lot more tolerable than when I first tried them.

It's a mixture of both for sure. Usually the eventual joy from the food is less of tolerance and more of your brain giving signals that the heat/pain is more enjoyable than not.

Most white people don't eat much spicy food, but they're capable of building a tolerance to it. I had hardly ever eaten spicy food growing up but in college I started to eat thai food and hot chicken
