My wife and I just had a baby and we are struggling financially. Combined, we make too much to qualify for any government assistance but with our expenses (car payments, insurance, rent) we won't be able to afford child care when my wife goes back to work.
Anyone else in a similar situation? How do you handle it?

You can look for a second job. That will keep you away from home from home for most of the day but it will pay the bills. You can also move to an area where the cost of living is much lower. It is possible to live in like montana on minimum wages and if you can make more, you can easily pay for day care.

Definitely and I have been looking. The main problem is that I don't get off from my day job until 7. Most places want you to start earlier. I've looked into uber/lyft but not sure if I would actually be able to make decent money compared to gas and effort put in.

I've been in exactly your situation. Do you buy coffee from a coffee shop every day? A newspaper? Sandwiches for lunch? Regular beer or wine in the evenings?
All that has to stop. If you don't believe me, write down everything you spend, or want to spend, if you're finding you don't have the cash in your pocket. You will be shocked what all the non-essential stuff adds up to.
Cut up your credit card. If you think things are bad now, you have no idea how much worse it will get if you start running up debts.
Again, if you don't believe me, get advice from a debt advice agency. There will be a non-profit somewhere who can do this for you.

Join the army reserve or national guard. Go away for about 6 months of entry training and get paid for that. Then you work one weekend a month two weeks/ year and get paid (decent little income boost) best part is health insurance through Tricare is $200/ month and you can shop at commissary/px and save money. Now without having to pay for child care and getting government assistance we are way better off than we were before. I earn more that you and live in the UK, where good healthcare is free, but I definitely do a couple of things much now more cheaply, e.g. Phones - you can get some excellent Android ones for about £150 outright (get a good case for it, will last 2-3 years easily), and a decent amount of data for about £10 a month. Your style of living is now all about making sure your little spawn is the most well taken care of person in your state. You and your wife will not spend very often together.
