A lot of the most celebrated songs are the Lieder from the German Romantic period. Look for ones by Brahms and Schubert in particular.
French chansons from the Impressionist period are also nice: look for ones by Debussy.

Hovhaness was not much of a song writer.

If you like it mellow, you should check out Joep Beving.
A modern composer/pianist who make the most relaxing music ever.

Tchaikovsky's Violin Concerto in D, Op. 35

Danse Macabre by Saint-Saens is great
Mussorgsky's "the Gnomus" from Pictures at an Exibition is great, too, but you should just listen to the whole thing.

If you want something short, Evgeny Kissin's performance of "La Campanella" is good.

Really anything by Shastakovich is amazing if you want to relate to the terror and poverty of Soviet peasents.
