Between Medium and Medium Rare. There's like a sweet spot where the meat isnt stringy and chewier like Rare but not full medium. Also it depends on the steak i think. For a Ribeye I like it medium rare but a less fatty steak has to be more medium.

As rare as I can get it. Thing is when I used to eat steaks rare at my home, I could cut it in half and get my mashed potatoes to turn red. Nowadays rare steaks in restaurants are still more pink than red, and there's no blood. When I get something that's pure red and still jiggly raw on the inside, it's gold.

If it's the first time I'm ordering from the place, I usually get it well done. I do that because I find that a lot of restaurants fuck it up and/or ignore what you asked for if you order medium. If they do a good job I'll usually order medium.

I prefer it fresh and uncooked. I only get it like that once every few years. There's nothing tastier than a flank steak cut straight from the cow. Besides, killing and butchering the whole cow is wasteful as fuck. Just take off meat as you need them, stitch them back up and let them heal. The best part is once you've done the roasts they can't move around anymore so they get nice and marbled.

A1 is awesome as a mix in for burgers. It seems like it'd be a bit strong of a taste for something as delicate as steak though

I get taken places that are... not perfect due to cheap people in the family.
while my grandpa was alive and foot the bill, we went to good places, but when he passed we have to go to other places.

as for the places we go, they aren't dumps, but when you see some fairly noticeable clutter, or stickiness to seats/tables, I don't trust that the kitchen is any better. I personally will not eat at all in an outright dump unless the kitchen is visible.

ramsey prefers the meat perfectly cooked and has the experience to know what that is and how to cook it that way.

most people would need a meat thermometer and a guide on what to do.

Personally, my method of choice is suvi and then char/searing/carmalizeing after its cooked. this way you get perfect meat/whatever you want, as it's up to temperature, but doesnt get overcooked due to life getting in the way. the main problem is its unappealing to look at when done, and you miss the flavors of burning/carring/caramelizing

hands down the best way to cook for anyone who cant be asked to do it right though.
