Gender is something invented very recently and just means how you feel. So technically you can be gender fluid and all that other insane stuff.
What you cant change is your sex. That is down to your chromosomes where every person either has XX or XY. And we cant alter peoples DNA (yet).
That also means that when people say they had a 'sex change' they really mean they had a very medically invasive gender change. Which they could have just done in their mind since males and females are supposedly equal and gender is just a feeling.
