You do have me wondering if there are some cultural taboos involved. Between friends and just observation over the years while dining out I don't believe I've ever seen or overheard a black person order a steak that wasn't cooked more than medium. We'll set aside "taste is subjective" or that any respectable chef would say you're ruining it to go beyond medium rare. There may just be something cultural involved with that. It could also be a cultural phenomenon to the US general. I know more than a handful of whites that will turn their nose up at the slightest hint of pink. I was just being facetious about the initial troll. Believe me I know nothing is better than home grown veggies. Been doing at least a half dozen varieties of chilies four years running. Bunch of heirloom tomatoes every year as well because I'll never eat a chain restaurant, fast food or grocery store tomato ever again... fucking bland window panes.

Ingredients:

2 teaspoons oil
1 teaspoon dried onion
3 cloves of garlic, minced
1 pound lean ground beef
¾ pound beef sirloin, cut into ¾” to 1” cubes

14 ½ oz can diced tomatoes
1 bottle New Castle Brown Ale
1 Cup Strong Coffee (or 2 pouches instant coffee mixed into 1 C hot water)
2 6oz cans tomato paste
1 can beef broth (or 1 tablespoon beef base mixed into 1 Cup hot water)

½ Cup Brown Sugar
3 ½ tablespoons Chili Sauce
1 tablespoon Cumin
1 tablespoon Cocoa
1 teaspoon Oregano
1 teaspoon Cayenne
1 teaspoon Coriander
1 teaspoon Salt

2 cans Kidney Beans
2 cans Red Beans

5 drops of Ghost Pepper Sauce (Naga Jolokia Pepper Sauce) Add more to taste.

Directions:

In a large pot, add oil and heat.
Add meats, dried onion, and garlic. Cook til meat is browned throughout and juices absorbed.
Add tomatoes, beer, coffee, tomato paste, and beef broth.
Stir in sugar and spices.
Add beans, add Ghost Pepper Sauce
Simmer for 2 hours. Stir periodically. Add water as needed as chili simmers to maintain preferred consistency.
