What state, cause I think a state that needs "gun permits" means your stuck with a shotgun

Fist if you're serious go to a real gun forum and ask questions there not on /b . And to start an answer for you a Remington 700 in 270 or similar caliber an excellent deer rifle. AR is no the best hunting rifle (think bolt action)but will suffice if you want something more multipurpose. If you're hunting turkey you need a shotgun 12 gauge that can shoot 3 inch mag shells. Again Remington or Mossberg are good choices depending on your budget

Mass I’m pretty sure you can buy hand guns and rifles in all states with some hoops to go through but some states have tried to ban some “Assault” rifles but I heard there are ways to get around the laws

"building" an AR is more like assembling them. They're like LEGO. Just buy the parts and put them together. Decades of US military investment in the AR/M16 platform has created a modular platform held to tight tolerances.

Just get a Remington 870.
If you actually do use it for hunting, you can use #6 for turkey and slugs or buckshot for deer. Remember there are laws restricting how many rounds a hunting gun can hold, and the 870 makes it pretty easy to install or remove the magazine tube plug unlike the mossberg.
For larping you can get an 18" smooth bore and a mag extansion.
Maybe a sidesaddle if you want to achieve mall cop status
