Strip mining is the thing for me to do too. I gotta build up a bit of security so I can recover and not need to degrade to iron picks. I will take it easier as I go.
Never fought the dragon eh? You really should. It's not about the dragon giving any paticular reward, but I am all about the shulker boxes. Carrying around an entire inventory of space in one slot is pretty effective, even more if you have your shulkers in an enderchest, carry an enderchest on you, and have a silk touch pick on your person. You can carry SOOO much stuff like that.

Ah, in that case I will teach you a bit more about the end. If you go to end cities keep an eye out and you will see ships in the end cities at times. If you go there a loot inside will be wings called an Elytra. If you time a jump and use a rocket you can fly in the air with an elytra. You can fire off additional fireworks to keep going. But, make sure you wait until you slow down before you hit the ground or you may die from the speed you crash into the ground. The elytra is the fastest way to travel aside from a riptide trident to fly around in when it rains.

You could always try out flight in a creative world. Just equip an elytra there, craft up some rockets and use the rockets to see what it is like.
As for beacons this is what they can do: Regenerate your health over time, increase your damage, make you run faster, jump higher, increase your mining speed so blocks melt away even faster then you could remove them in creative mode, and lower damage you take.
There is also a water version of a beacon called a conduit. All that conduit does is lets you breath underwater, see better underwater, and mine faster underwater. This is crafted using a heart of the sea, these shell things, and then you kinda put prismarine blocks around it as if it was an enchanting table underwater till the effect activates.

Longterm it's actually perfect. Slime access without needing a slime chunk, squid access, drowned access it's easier to place and dig out a lot of sand then to mine out TONS of stone to make an efficient mob farm. Once this place is done it will be more effective then say a plains base.

The buffs last for only a few seconds technically, but they're constantly renewed as long as you're within a certain radius of the beacon.
The tradeoff is that beacons require a lot of valuable blocks to have them working at their best, and you can't have all of those buffs at once with one beacon.

Okay.
So, the swamp is special because this is the only biome slimes can spawn on the surface of anywhere on the biome at night. This saves time needing to hunt out a slime chunk.
Drowned spawn naturally in the ocean biome which I am on top of. This is a source of extra gold and tridents.
Squid now only spawn in the ocean and river biomes, so this gives ink sacs and I usually use a lot of black for various designs.
The beacon and conduit effects last forever as long as you are within their range .They are stronger based on how much prismarine (conduit) is around it or iron/ gold/ emerald/ diamond blocks (beacon) are under it in the right pattern.
Yes, it's a crazy fask, but I have already knocked out a chunk of it. I just need to pull together a little time here and there focused on gathering and placing sand and before you know it I will have cleared my entire boundary I set up of water.

Quick mining tip: Always place your torches on the left or right side . This way to go back you just make sure your torches is on the opposite side and it will take you back. Worst case you have your home coords.
