tl;dr my question is, if i go out there and find a car the same as mine and note down the plate number, then hammer out an identical copy with dies and aluminum, what's the likelihood of being pulled over? i assume if they ran the plates itd come back superficially fine, even better if i fake a sticker in the corner too. i'd be fucked if they pulled me over, but then i'd be fucked with no plates too, and no plates is way more likely to get me pulled over.

A few tips:
There's a Russian on Etsy who sells convincng ON plates. Search it up. Buy one set of the donor car's plates, and one set of dealer plates (copy these from a real one too). The date sticker can be created using a child's sticker machine.
Make sure the donor car is the exact same make, model, year, color, trim level, transmission etc. An IDENTICAL vehicle.
Make sure the car is not excessively old, nor prone to failure or dishevelled in appearance, A clean '08 Caliber like you described would be fine.Make sure the lights work. Make sure they can't pull you on something basic.
Drive safely and within the law obviously. Carry no ID in the vehicle. If you get pulled over, tell the cpo you're taking the car to your friend's auto shop - then act like you forgot to put on the trade plates he gave you. If he asks for documents or your ID, say the owner has all the documents and your wallet is at the shop. Keep acting apologetic and there's a chance the cop might just drop it - after all, the vehicle comes back fine and the dealer plates also check out, there's a reasonable excuse for not knowing the owner's name and so on.
If he doesn't, a swift getaway is key. To get away,high speed and many corners are essential. Take a corner-y way back to your house, duck in the garage, take off the plates and open the hood to cool the engine quicker. Plus points for a fan to help. Hide this stuff and the plates adequately once the car is cool. If the police show up, don't answer. wait for them to leave then go to a hotel for a few days. If they don't show up then don't bother. if you have any exposure at all to cops though its better to change the donor number.
Other than that, just don't attract attention. Don't bang out music or use your phone or any of that nonsense.
