Listen here; Potion Seller has been in this industry for over 2 decades. He took one look at The Traveler and could see exactly what he could handle
then why didnt he sell him a fitting potion and pretend it was the strongest he had? potion seller clearly being a dick telling him he can't have his potions

This guy gets it. As an honest businessman it would have been unethical to sell him the potions.
would a 7-11 not sell cigarettes to a patron because they are worried about their health? the knight was an adult and free to make decisions on his own. the potion seller warned him but he persisted and should have sold them to the knight.

unethical yes, but maybe a death by potion is a humble death than dying on the battlefield?

Couldn't the Knight dilute any of the Potion Seller's potions with water? He said they were strong enough to kill a dragon. Someone math the ratio of potion to water the Knight would need to not die.
But potions require exact ingredients and brewing time. Adding water would probably just make it useless.
It would still rest on the potion sellers concious. I mean would you want a completely avoidable death on your hands?
Adding water would have no effect on the ingredients without further brewing. It would just weaken the potion by creating a solution with less magical ingredients in any given volume.
When a heroin addict dies from OD, the guy that sold him heroin actually gets better business.
Because all the other addicts now know that he has strong shit, and don't care about dying.
I imagine that's how the potion business works too.

The knight should not need potions to go into battle. His skill alone should be enough to be victorious in battle. Then again the potion seller should have a weaker potion for the knight.

You simple minded n'wah. A potion is more than eye of newt soup. The gross molality of a potion is over 80% catalyst(s). A single battle would extinct the entire unicorn species if ingredients scaled linearly with effect. Those goofy looking bottles are more than gaudy upselling; they are reaction vessels that depend on a VERY specific vapor pressure, etc at key points when drunk. Diluting them would at best give no effect and a false blow to the seller's reputation, at worst do a dark wizard's job for him in spectacular fashion.
