If you have a DNA sample, finding genes that influence skin colour is easy, hair colour too.
But what are you calling "African" or "Asian"?
Can you do some math and say this gene is African, this one is Asian? No, because even genetic variation is crazy, even within family groups and people have all sorts of ancestry floating around. There are isolated communities that have particular genetic markers (usually we notice because they're a disease or something) but even then, it can happen elsewhere too.
Ashkenazi jews have a higher instance of Gaucher's disease but just because you have it doesn't mean you're a jew, it's just 100 times more common in them (at least one type is). Same goes for any gene that you might point to and say it must be X race, other people can have it too.

At best, you can say that someone probably has light/brown/dark skin and probably has red/white/black hair.

size of difference isn't what is looked at here, it's difference in a few subsect of genes. Yea you can usually tell what skin color someone is from their genes. What I meant is the problem isn't really in the bones growth (since I've reach adulthood said growth is completed) but the fact that they are in their permanent shape now. Which is unfortunate because essentially the 1,5cm (about so) length difference between my legs is now also permanent unless there would be such a gene correction treatment (may not seem like much but as a runner the difference between both legs is easy to feel)

If you take two samples from the same organism but from different places on that organism, they'll be different.
Not much different but a little. Sometimes it's enough to be a problem (cancer) usually it's irrelevant. Who cares if a cell in your heart has a mutation that would cause red hair? Actually that's a bad example because red hair is linked with some heart condition but you get the idea, only some of the genes are used by a given cell so many mutations don't matter.

Anyway, you're not one single DNA code, you're more like an average of a bunch of very similar ones.
It's close enough that we can still tell who some DNA came from but if you took two samples, they'd be a little different.
Siblings and the different kinds of twins aren't because of this though, that's down to recombination which is a whole other story.

Most modern forensic DNA matches use about a dozen or so 'genes' (actually alleles and usually only a weakly conserved motif) to establish identity.
The odds of somebody having all those particular genes in the exact same configuration are about 1/billion.
