If the supporting structure is concrete, a fire will do nothing to it, but if it's all steel (like the twin towers for example) a fire will weaken it, and did weaken it up to a point of failure. Smaller buildings like the ones in your fancy burning building examples can easily and usually will be made with concrete because it's a lot cheaper, but 100+ story skyscraper would be too heavy with concrete, so steel has to be used.
