A couple of my favorites:
Bellavitano Espresso: nice Italian cheese with a tang, more flavorful than an Asiago. This variety has a coffee dusted rind and is super nice with olives and tomatoes.
Saint Andre: soft cheese kinda like a Camembert, but nicer. I usually just have this with crackers. Frickin good.
Havarti: my favorite for sandwiches
Smoked Gouda and a great Sharp Cheddar are just good for sitting around eating cheese.
