The lamb is actually a reference to the Jewish tradition of Passover. You might remember from that Disney film about Moses the final plague where he killed all the first born of the pharisees, but passed over any house that had lambs blood over the doorway. Thousands of years later it had developed into a ritualized holy day, preceded by fasting and culminating in a feast at which they would consume a sacrificial lamb.
Jesus used this tradition and instead of sacrificing an animal, he sacrificed himself. There's also lots of other little esoteric things like the cock crowing shows what time it is, and Passover isn't over until the host drinks the last cup of wine- which if you'll remember Jesus asks for wine just before he dies on the cross.
I like this story because it shows the mystical, ritual side of Christianity. Jesus Christ was a human sacrifice meant to bring about spiritual balance. He took existing spiritual memes, adjusted them to fit his needs, prepared a ritual, and performed it. In some schools of thought this would be what's called High Magic. Human Sacrifice in Catholic Doctrine. Cray stuff.
