To get around this, you reverse sear to raise the temp and keep the flavor while getting rid of excess moisture. Which one you sear leads to a crisper sear, due to less water content, which you can butter baste for a nice garlicky pan sauce.
It allows you to have both a saucy-juicy steak and a perfectly cooked sear, while keeping it perfectly rare.
