you're doing it wrong.
Form a limited company and work as a director. Have your wages be payable to that company account. Put as much money back in to your company as you can do to protect your capital from taxes. Corporate tax is lower than personal income tax and you'll have two tax outlets: the company and yourself. Pay yourself one euro less than the tax bracket you want to avoid and keep the rest in the company. You can pay yourself a tax-free dividend too. Your company can also fund deductible expenses such as cars, so whatever tax you're paying from the company you might as well use some of that to fund yourself a brand new car since that money can either go to the tax man or can get you something useful. You can also offset all of your business related travel expenses, and as long as you keep receipts even things like business entertainments can often be deductibles.
I'm not German so I can't help you on how much to move around or what manner you should move money in and out of the company to avoid taxation, or what are valid deductibles, but you can afford a local financial adviser. Go get financially advised.

You type like a german, but I don't believe you are one. To a real german 2700 euro a month is a great wage. You can even live comfortably (albeit in a tiny apartment) for less than half that. If you are struggling with money it's because you have an apartment/car/whatever that you can't actually afford.
Stop trying to live like an american plastic surgeon. You have a nice job but you can't afford to live like the doctors on TV, but you can live more comfortably than most people in your country.
