Brie is paler on the inside.

They look essentially the same, Brie has higher fat content due to cream being used instead of milk alone. Saw some vegan "brie" which was paler in color. Both are very similar so I see why you would say as such.

Cheese is so good. Gruyere is my fav by far.

Well, Brie is also a lot softer on the inside. You wouldn't normally be able to cut it into pieces like that without the skin collapsing.
Also if you reverse image search it, the result is camembert.

I like only a very small range of cheeses. Mature cheddar, brie, mozarella. Can't stand anything more pungent than cheddar, and most other cheeses are underwhelming in taste and texture.

That's why you cut cold, I wouldn't doubt it to be either since they are very similar. Good tastes user.

Oh, I forgot to mention feta cheese too. I just love Greek salads.

Gruyere, Asiago, Gouda, Mozzarella, Cheddar are my five consistent favorites, but I like pretty much anything.

Feta is very good too.

Like most people, I've eaten Gouda consistently in its melted form in burgers and the like, but never on its own. I guess because of the fact that it's consumed with fast food, I subconsciously associate it with something "trashy" even though I enjoy it.
Never tried Asiago or Gruyere, but considering how similar our palettes are, maybe there's a point in trying those out.

Actually, after looking it up, I think I've tried Gruyere before.
But it's a sweet one, right? I don't really appreciate sweet cheeses at this point unfortunately. It just tastes unnatural for me, like there's a disconnect between the smell and the taste. Plus it's got one of those pungent odors iirc.

Okay, first off that is shocking. Never had it on burgs or with any fast food when I used to eat that trash, umm yeah, not trash and actually pretty pricey for the good.

Gruyere is too of the top for any cheese, it is Godly. Asiago is also pretty epic.
I would call Gruyere a soft savory, not sweet in particular. It doesn't have a strong odor either from what I recall, but the flavor is super intense in the best way for my palette at least.

I detest artificial cheese and "american cheese", sucks to say because I am from the US.

I will keep a look out for Gruyere.

It's nice here in the United States, but people are silly too, they do and say the most ridiculous things at times.
