Start with Black Souls 1 and get the canon ending and DLC3 black trial ending
Black souls 2 won't hesitate to spoil a ton of shit from BS1. BS2 has better gameplay later on, you're given less far handholding than BS1 but there's still a ton of story to cover and places to explore. SEN is a far cooler mechanic than Sin. Both are good games with some cool boss fights and will require multiple clears to reach all the endings.
Unironically some of the best RPG gameplay I've had in the past ten years and probably the best RPGmaker games ever made to this point.
