Guac games were both fantastic, the chicken form in 2 was not great but the overall combo mechanic had more work put into it that made it even more fun than it was in the first game. Infierno challenges in Guac 1 were especially fun. Hollow Knight had a great art style, but the map got frustrating to traverse after a while, and the character felt too stiff to platform with (too little momentum). I didn't feel like continuing after getting the dream needle and doing a couple of the bosses after needing to re-tread the map with it.

Spooky bug cave is a nice aesthetic, and some of the architecture is even a bit Giger-esque. It evokes a strong feeling of exploring something old that was abandoned for a very long time, kind of like the tone of Dark Souls 1. It's got some nice setpieces, and the City of Tears was one that always stuck out to me.

My biggest pet peeve with Metroidvanias is that the movement abilities you get trivialize the platforming. I like that Blasphemous' abilities alter the world instead to keep the focus on tight platforming challenges.
I think there's more than enough variety in the level design itself to keep things fresh even if your toolkit is somewhat limited compared to other games in the genre. It's not the approach I'd prefer for every Metroidvania but I think it works really well in this case
