my favorite is when you're in a fight, and an enemy will die and you'll be "awarded" an item in the middle of a fight.

It's intentional, just like when you go to quit the game, pressing "B" at the "Yes/No" prompt to escape the menu doesn't close it. You have to select Yes or No for it to close.

and yet you cant keep torrent alive. just goes to show anything is possible if you grind levels enough.

That's because you are completely ignorant to things done in previous titles that worked correctly:
"Some where a heavy door opened" didn't stop the player from doing anything in Bloodborne
Crouching didn't stop you from interacting with NPCs or items in Sekiro (Sekiro didn't have chests or ladders)
The entire series up until this game, you could skip NPC dialogue instantly, now you have a gay delay and can't attack or do anything when dialogue is on the screen

Let's also not forget issues which are exclusive to Elden Ring such as being unable to double jump after walking off a ledge because your weapon type affects that ability, or you being unable to perform a critical attack (posture break attack, backstab) because the enemy is floating on, or clipped into, the terrain.
On the PC version, the game doesn't remember where you last left your cursor in the menu--this was a staple of the previous games

The entire issue here is you attempting to normalise those kinds of things out of plain ignorance. FromSoftware really need to fix this game. Ignorance isn't even the main problem, it's your lack of self-awareness when you flaunt and taunt others about you having "no issues with"

None of the games are perfect, but Elden Ring is by far the worst example of for its design choices outside of Dark Souls II

That's something people say who haven't been past the capital yet.
Torrent doesn't seem to scale and is really durable in the earlier portions of the game, but in Mountaintops/Snowfield he's squishy as fuck with the damage being dealt there.

I don't understand how the horse works. Even when you rest at a bonfire it keeps low hp, but sometimes it has full hp.

I think he slowly recovers health in real time but not when you rest for whatever stupid prease understandu reason
