I always considered Uncharted theme to be tremendously uninspired. I know that it's blasphemy, people love this shit, it's iconic, yadda-yadda, but to me, it sounds like the theme tries to go somewhere, but something holds it.
anyway, the most soulful menu is hl2, like, it's not even a contest. Seeing a sneak peak of what's to come, what has been, after you quit the game/start it in anticipation on my first playthrough was like nothing else. Portal 2's endgame credits was cosmic, pardon the pun.
When it comes to music, probably Bloodlines or Outer Wilds.
