That isn't really a big hole in the theory, it would be very easy for Kris to make up that Asriel hitched a ride with someone "to college" and Toriel would brush it off as Asriel being an adult now and "well he left without saying goodbye, oh kids grow up to fast :( hope he's okay in college". It's super weird to me that Undertale had this whole huge Christmas town and Noelle and her family are nowhere to be found. No hint of them even. I'm pretty sure Toby had the concept of their family already before Undertale released, so why is there seemingly no hint or anything about them?
All of the major players in Deltarune are coincidentally not returning Undertale characters. I assume Toby specifically didn't want to include anyone he had a "grander plan" in mind for.

I do think something will be up with Asriel, its seems characters all have a predetermined fate considering lots of similar things happened between both the games like Asgore and Toriel splitting up, Rudy dying young, the amalgamates remain dead in deltarune etc. It would be hard to believe if that was the twist, he would have to of recently went to college for this to work, Toriel would 100% be a helicopter mom and its not like other phones don't exist, she would get pretty suspicious

I'm still wondering what the fuck caused Asgore and Toriel to break up in deltarune. In Undertale, it took the death of their sons and even then it took him outright declaring war against humanity for her to leave him, and him killing 6 human kids for her to hate him.

The main trio were designed while Undertale was in development (their character concepts probably existed even before that, we don't know exactly how comprehensive Toby's dream was). Rudy, and Noelle and Dess, were retroactively confirmed to exist in the Undertale universe through the alarm clock app which details Asgore's good friendship with him. Rudolf died, of natural causes, by the time Undertale takes place, but Noelle and Dess made it to the surface with everyone else. undertale.com/alarmclock/asgore/
I can only speculate, I don't think we have any indication about whether or not and to what extent Deltarune was ever intended to be an independent game from Undertale (and how much is "foreshadowing for Deltarune in Undertale" versus "Deltarune concepts and characters that were repurposed for Undertale"). But at the minimum I think it's safe to say having Deltarune's main characters be proper "original" characters was a deliberate decision on Toby's part, so characters like Noelle and Susie and their families were deliberately excluded from having Undertale equivalents.
In Chapter 2 you can investigate the police station and learn that Asgore was forced to step down as chief of police for reasons that aren't specified before Kris makes you to stop reading. It couldn't have been anything too horrible, as Asgore still seems to be generally well-liked in town and most speculation suggests it had something to do with Dess's disappearance while Rudy still considers him his best friend.

Noelle is definitely associated with angels/"the Angel," but Spamton and the Addison could have also been addressing Kris when they say "angel." Spamton definitely was, his other dialogue talks about things like Kris's inventory and Noelle doesn't speak or respond at all during the entire sequence, even when you put the ring on her.

The date on that tweet was more than two months before the Omori Kickstarter launched. But Toby was familiar with Omocat and could have been in on more details, even just from the original comics. There are lot of broad similarities between Deltarune and Omori, especially the central theme of escapism, you don't have to jump the gun to murder.

1. if the soul we see Kris removing is Asriel's, why is it colored? in Undertale we saw monster souls are white, whilst all humans' are colored.
2. in Undertale, it's implied that we aren't in direct control of chara, rather WE (the player) are a seperate entity. this is why chara speaks directly to us in the end of Genocide. chara is their own character, not an insert. why would it be different here, why would (the player) be Asriel, especially that now it's no longer a human were shaping, as to parallel ourselves?

Looking at things in retrospect, Toby's definitely had connections in mind from the very start to at least SOME capacity, he wouldn't slip Gaster into Undertale otherwise given how he's presumably shaping up in Deltarune. Gaster's the only real notable overlap where he's important to both games (worldbuilding in Undertale and whatever the fuck his deal will be in Deltarune), like you pointed out there's been deliberate separation in character mentions and prominence to keep the two games distinct, even if they are related.
