Heart of Sabik is the auracite at Ultima Weapon's core. We have no idea why it's named that except that Sabik is a star in the Ophiuchus constellation which Elidibus and Zodiark are representative of. It's in the Endsinger theme because they reprise all the previous final boss themes as part of a theme in the expansion of calling back to the game's music as a metaphor for your journey.

I don't know how you managed to cutscene skipper this considering the cutscene that explains this isn't even skippable. The Heart of Sabik is the core of the Ultima Weapon that allows it to cast Ultima. It might be related to Elidibus, who is the heart of Zodiark, or the Arch-Seraph Ultima from the Ivalice raids (since its powers are compared to auracite and she creates corrupted auracite). The reason it's called Sabik might be because that's Elidibus's true name? Don't think it's been explained.
The reason it's sung about there is because Endsinger's theme is a medley of every other final boss's themes, because she's the ultimate peak of despair that all of these obstacles have been leading to. The Ultima Weapon was just one rung upon the ladder you climbed to become strong enough to overcome true despair.

He wasn't "never told". The devs didn't decide what Nael was going to be until Second Coil was being worked on. English doesn't naturally use gender neutral pronouns or, it didn't in 2011 before the entire English speaking world got gaslit like JP does, so they had to call Nael something and Nael used a male skeleton so they did male pronouns.
