Why did Kaathe attempt to bring forth the age of dark in DS1 if his ultimate goal was destroying humans to consume humanity in a stagnated, impure ("kegare") state (see Ringed city)?
Right from the beginning Kaathe never wanted to help humans, he only wanted to consume humanity (see Artorias of the Abyss). By DS3 Kaathe is already dead, but his followers mention his desire to continue the age of fire indefinitely past it's natural expiration date so that the humanity would stagnate as time becomes convoluted (which is what we see in the usurper of fire ending).
Overall this is pretty confusing since even if his motivation was always the same, his actions in DS1 and in DS3 are opposite and contradictory. The most simple explanation is that by DS1 Kaathe didn't understand properly the natural cyclical time between ages of dark and ages of fire (ie that transitioning between ages is natural and healthy and prevents humanity from stagnating), but by DS3 he had finally cracked the code and knew that to accomplish his goal he actually had to prevent the age of dark.

Any explanation other than "Kaathe screwed up", mister loremaster?

Morgott also doesn't name his twin as a traitor, doesn't really consider him at all.
You can draw your own conclusions, but it seems like Mohg put up his projection there to protect the Frenzied Flame to gaslight his brother into thinking he was 'helping' when he was really trying to undermine everything down in his lair

It isn't.
The age of ancients was a very specific time period before the first flame. After the existence of the flame it's all "age of fire -> age of dark -> fire -> dark , etc...". Firekeeper's comments make it clear that no matter how much it may seem that the first flame is finished during an age of dark (and we know that there have been many by the time of DS3), some embers always remain and will eventually reignite another age of fire.
There's no reason to believe that somehow the dragons and archtrees will grow back or something like that, or that humans and the remaining gods will just lose their souls.

It's just that DS3 is set in an age of fire that has gone way, way, way past it's natural expiration date. The age of fire in DS1 was nowhere near as stagnated. This is why the world is crumbling upon itself in DS3, and if nothing is done the "age of the deep" prophecized by Aldritch would come, in which all humanity becomes an impure mess.
Thankfully the Ashen one came to save the day and return everything to normal by picking the correct ending, which is the end of fire ofc.
