Definitely more complicated in open world games with realistic and cluttered settings, but a lot of strategy games could still get by with grid based movement since the character shouldn't really take up any more room or need special physics or animation to believably navigate the environment.
I'd accept "Oh she just can't go inside buildings with you" or "when you go to the city, she prefers staying outside the walls" or being a limited time character limited to some open plains area where the cities are all camps with wide spaces between tents or designed for it. The rest of the world hasn't caught up to wheelchair proofing their layouts. Centaurs don't have to be first class, fully integrated citizens of a multicultural empire or follow you to every hat merchant.
Animating a unique skeleton is a lot of work but if you make centaur enemies or npcs for a section in fakemongolia you at least get extra use out of the effort.
No one will go out of their way to do it just because. But if it's a major part of their setting maybe we'll see it, one day. I'd be happy if they at least started somewhere. Just a side character rooted to a spot with bioware conversation tier dialogue animations and pacing a wide corridor.
