this is literally the reverse of what they did though, the new ARR stuff introduces universal mechanics like stack markers and different types of aoe dodging much earlier, compared to before where they were all just tank and spanks with some kind of gimmick everyone either ignored because the power level of the players has increased over the years but the stats of these bosses are the same, or a gimmick that amounts to "kill this ad"

Let's assume you played the game in 2.0 rather than 4.0 or later and go over what the dungeons actually taught you earlier on.
>Sastasha boss teaches you about interactable elements during battles
>Tam-Tara boss teaches you about adds and bosses going invulnerable
>Haukke Manor teaches you about add priority
>Brayflox teaches you about boss positioning
>Stone Vigil teaches you about dodging lol
At the time jobs were more complicated at these earlier levels so the bosses not introducing a bunch of mechanics all at once wasn't as mind numbing as it is now, where you're only gonna get around 6 skills on your way to level 50.
Plus this isn't taking into account stuff outside of dungeons which was already removed long ago, like crafting for white gear and to attach materia, leveling other classes to get cross class skills and doing other extracurricular activities like FATEs and hunting logs (seriously, do new players even bother with hunting logs nowadays?).
