>some hands require you to be closed (usual state), some allow you to be open - if someone's discarded tile matches a streak/triplet you can 'open your hand' by taking it and showing it matches, you can pick your tiles but lower your score/choices

I agree with manually counting the hands points. I'm not good at calculating fu and shit. At least there are phone apps that do it for you, but it's still pretty slow to input your hand.

Amazon (the US site sometimes has them, but I bought them from the JP just to be sure). They're also on eBay. Nintendo tiles are a bit more expensive since they're premium quality, but if you want a good set that's not too expensive, search for Amos tiles
