The best way is probably via HD collection on Series X. The best way in your list is probably on PS3. I hear the PC version is bugged.

i beat it last year on the ps3 remaster, which was fine, but if you can play the original in a way closest to how it was on release, theres no reason you shouldnt. play the extra snake tales missions on ps3 after youre done

MGS PC ports have issues.
HD Remaster messes up some visual effects or just straight up doesn't have them, which only really matters if you're a purist.
However, only the PS2 version has the skateboarding minigame, so it's the objectively best version.

the greatest issue with the HD collection is that Snake Eater is out of sync with the credits in MGS3, which is a fucking crime
