How do we fix the grinding problem in video games?

you're not just grinding for mats in monster hunter, you're learning the way a monster moves and attacks whilst mastering your weapon of choice. the satisfaction of grinding in mh comes from turning a 15 min hunt into a 5 min one not because you're using better gear but because (you) are getting better

That's because grinding was minimal even in RPGs. Getting a few levels doesn't take too long in the grand scheme of things. Nowadays you get MMOs that look at things like "You do X for 10 hours and you get a boot that is marginally better than the old BIS and also you need to get two of them and 90% renown to actually use them" and consider it good game design. Meanwhile there are mobages that demand some of your time every fucking day or you'll be locked out of rewards and fall behind unless you spend money. These are bad grinds

The ability to completely skip grinding is why I switched to PC.

I understand a lack of time, but lowering the difficulty makes no sense. You're an experienced gamer. Are you playing the game to overcome a challenge, or are you playing the game to waste time?

Unfortunately as a veteran of MH, that 15 min hunt is usually more like a 9 minute hunt since adapting to new monsters comes pretty quickly if you've been playing for a long time, meaning any increase in speed is purely from gear which you just want to quickly get out of the way to get to the higher ranks where the actual challenge of the game is found.

having fun is a waste of time. if you're not always actively bettering yourself then you're wasting your life.

Beating a challenge is satisfying. It's a sense of accomplishment that you don't get from just some simple platforming game for kids.
