You've got that ass-backwards. They are not "ez mode" tools, they are just "tools." Like the jump button, or the dodge button. You are expected to use everything at your disposal so the bosses, which feel unfair without those tools, will be balanced if you use them. The disparity is most obvious with bosses like the Godskin Duo. Fight them like a Dark Souls boss and they kick your shit in for 2 hours. Fight them like an Elden Ring boss, with all of your Elden Ring tools, and it's a first-try victory.

i explored thoroughly and was ready to end the game when i reached the capital

I like the snow area. I like wandering through a snow storm to find the hidden path to the Haligtree. I like trekking up the mountainside to reach the Giant's forge. I never felt either was a slog.

there's 3 dungeons, a handful of world bosses, quest npcs, the ordina puzzle, a puzzle tower, the entrance to mohgwyn and haligtree, etc. It has nearly as much content as mountaintops despite being 1/3 the size.
Who cares about a fucking achievement I want some fun, the fact of the matter is using summons breaks the AI of the majority of the bosses and turns them into retardedly easy punching bags
She is the only boss you still find exciting after having played the game for way too long beacuse she is the only boss that can still kill you with some bullshit attacks if you're careless. Don't equate that with good game design. Your first encounters with her are absolutely horrible, and everyone has the same "this is bullshit" reaction--because it is. Watch any blind playthrough if you don'tbelieve me.
Her gravity-defying anime attacks come out way too fast and are way too unpredictable to be fair on your first encounters. Some attacks are nearly impossible to not get hit by if you don't abuse pots or other strategies you won't think of or believe are necessary before you analyzed her for a while. The biggest offense is that her animations suck. Her attacks just randomly accelerate midmotion, i.e., she winds up an attack, then the actual attack animation starts but is still slowed down 50%, even though her sword or leg or whatever is already flying, and then it suddenly accelerates to 500% speed. The webm isn't the best example (I think whoever made it just wanted to show her ass), though.
There are a couple of decent bosses in From games. This isn't one of them. All the late story bosses in Elden Ring are better. Dark Souls 3 has better bosses. Almost every Sekiro boss is better, albeit not very comparable.

People complain about those areas because they're numerous, monotonous, and may or may not harbor some godly item/weapon or just another piece of jank, compelling you to explore for a reward that isn't worth it through an area and enemies you've already experienced tens of times before. The game is very long but doesn't offer the variety behooving its run time. My two pennies. I still enjoy the game but I agree with the criticisms.

It's very obvious in this webm. This is actually what gets people hit and what they mean when they wrongly complain about "delayed" attacks, which aren't bad if done right.

People don't get burnt out by the amount of content but the quality of it, the mini dungeons are copy paste garbage with the same enemy types and mobs with health bars, you end up killing the same dragons with the same movesets, but different coloured breath, you end up killing the same erdtrees avatars in multiple different flavours, all of these being the same as enemies from previous games.
Its no wonder people are burned out by the end, there is nothing to hold your attention in those open world zones, the game blows its load in Limgrave and gets more and more repetitive till you are sick.
But it is the game's fault. The problem never existed in previous shorter From games

My first playthrough she was the hardest boss in the game for me. I spent 2 hours before finally killing her. On my second playthrough, she was the easiest endgame boss. I got her on my second try whereas other bosses like Mohg, Maliketh, Godfrey, and Radagon all took a few attempts before killing them. Malenia is a very fast-paced but fair fight once you learn two things; How to consistently survive Waterfowl dance, and how to take advantage of her 0 poise. She's the endgame boss that most resembles another player (except for Gideon). She doesn't have any obnoxiously-timed attacks, and there's very few points in the fight where you're waiting several seconds for an opportunity to attack.

That's literally a blatant sign of her being unfair. It's normal for bosses or nearly everything to become easier upon repetition, but it's only with unfair bosses like that where the drop-off is this insanely huge and fights can go from "I needed a day" to piss easy.

I have currently played Elden Ring for 250 hours and I am not burned out. The ironic thing about your statement is that 200 hours of, say, DS2 is four playthroughs - four identical routes through the same content. Conversely, that is 2 playthroughs of Elden Ring, but many people complain that Elden Ring is the one with the repeated content issue.
Is your complaint that there's not enough content, or that the content isn't novel enough. Because your criticism seems to change entirely whenever you get BTFO
