SJ has one of the best settings and atmospheres of the series which says a lot because that's the crux of most of these games, but it playing like the older games without the press turn makes it pretty slow and standard.

American Dad continued the SMT series with the OBJECTIVE AND CANONICAL neutral ending, whereas Door-kun is stuck without a vending machine license. Door-kun suffers more as he is a stagnant wall forever, so he has the worse ending. Raidou wins in every case.

To summarize, the Schwarzwelt is a demon world that was created in response to the damage that humanity has done to the Earth by their constant wars, enviromental damage and explotation of resources, it´s purpose is to engulf all of the planet and destroy all humans as revenge for what they´ve done. In the Neutral ending of the game, the MC and crew manage to escape and destroy the Schwarzwelt, however it´s stated in the ending that as long as humanity doesn´t change their destructive ways the Schwarzwelt WILL return. The Redux version of the game has an additional Neutral ending that follows the same ending as the original, but this time the MC decides to stay behind in the Schwarzwelt while his crew escapes, then in the post credits scene of the game, you see that hundreds of years have passed since the end of the game and humanity hasn´t learned anything and haven´t changed for the better thus the Schwarzwelt returns time and time again, and the only one that stops it every time it happens is the same MC from the game, that has become inmortal in order to protect humanity until they finally learn from their mistakes. It is now the seventh itineration of the Schwarzwelt, the MC prepares to enter the Schwarzwelt and his robot companion asks him the question: "Do you still feel human?" The MC then nods and leaves to fight once again as the eternal guardian of humanity.

Cope. Redux is as canon as any other SMT game. Its like saying you don’t like the QOL changes or the epilogue in FES, so you screech that it isnt canon, but that doesn’t change the fact that FES is canon (in the Persona timeline).

Door-kun. Vending Machine-kun got to bang Louisa. While spending time on the moon might suck, at least he's able to move around whenever the Schwarzwelt appears so he can destroy it. I'd say he won. Door-kun is stuck saving humanity from the fall. While he eventually came to terms with it, being separated from his friends is still pretty shitty.

No. She’s annoying in that you can’t defeat her and have to run from her for a while. (IIRC, there’s an entire floor of the new dungeon where she *blocks your path*). Should you wish to doom humanity and pursue one of the original endings, you can kill her.
Redux is the superior version by far.

The level design in Persona 3 is the best in the series. In 5, the dungeons are all style, zero substance. You are opening doors, and activating switches, but all this amounts to is jumping and pressing triangle. It is useless nonsense that does not add any challenge or depth to the game. It isn't even like SJ, where dungeon design is an entire facet of the game that you must learn and get good at navigating.
In contrast, Persona 3 is utilitarian. You don't need useless nonsense, you attack the enemy get straight into the combat.

P3MC didn't have a bad ending at all, it's bittersweet and he "died" happy. It's a hopeful ending overall. The Strange Journey ends are all worse because they're either just bad or they're just delaying the Schwarzwelt's return, unless you count DSJ.
People also always make it out like Tatsuya got a shit ending, but it's also just bittersweet. He goes back to his world hopeful about rebuilding and believing in Baofu when he says some things get better as you get older, and things are looking good for the EP universe Tatsuya too. Obviously it's not an idyllic ending, but I don't think it's as bad as people make it out to be. Contrasted to SJ's endings it's still hopeful for Tatsuya, as opposed to the cynicism of how even the neutral ending in SJ goes.

No way. Seeing Elizabeth's antics is entirely different than reading about them, for example, and that goes for just about every cutscene. Doesn't matter how stiff animations are, they get the point across.
