Actual role playing inside a video game is incredibly difficult because video games are inherently limited by their mechanics. The perfect example of this is "Essential" NPCs in Bethesda games, characters who you cannot kill because it would break their intended narrative structure.
The role playing comes primarily from a character's build, not necessarily the personality and appearance, because these often have minimal impact on the overall story the game is telling. Fallout 4 was roasted for this but in reality many, many RPGs boil down to the same "I'm a good guy and I will do X" or "I'm a bad guy but will also do X because the story demands it"
