I don't think the Golden Order is the Elden Ring sans Destined Death. Once that rune was removed, The Shattering ensued, and the good times were over. Doesn't make sense that the Golden Order would be formed when things went bad.

Fair enough, last story boss I beat was Fire Giant. I'm still skeptical about the explanation for the Golden Order, because it's generally held as a positive expression of the Erdtree/Demigods/ Elden Ring, and it coming about in response to a negative event like Destined Death being removed seems contradictory, but we'll see.

Isn't this a common problem in games that are set in medieval times that have monsters in it? Look at the witcher 3, there are plenty of monsters in it, but how is that possible? Supposedly, the humans are out-breeding not only the monsters but all the other races, as well. Where's the synergy? Sometimes, the monsters are portrayed as op as all fucking hell and waste humies in the dozens without breaking a sweat, other times, a single small unit of soldiers are able to bring down a monster.
