how disappointing

I only really like bannerlord in the phase where your horse is still fast enough to catch everything but you have a decent sized army. Anything after that just gets annoying. Horse gets too slow, managing towns and castles is a shitshow, feeding your armies and keeping their morale up is a chore etc.

Yeah in most games I'm unable to roleplay as a villain. Not sure why, I just don't get the catharsis from it that others do

It's very unsatisfying to be evil in most games because you almost never gain anything from it and the world usually doesn't acknowledge it. You're just a murder hobo. If games gave you more interesting options like enslaving your enemies and creating a slave trade or assassinating the current ruler to become king yourself, I'd be much more interested in doing an evil run.
