Unironically you have to use jumping attacks. They often go over his swings and hit him while you receive no damage.

You can attack him at any time, in the middle of his combo and not get hit. The only time when you can't attack is when he's bouncing off walls and when he does the vortex slash.
You can just use regular attacks and his attacks will go over your head. He's a midrange almost exclusively.

He has low HP because there are few opportunities to attack.
One that I can get consistently is that I can get a rolling R1 if I dodge towards his normal sideway slash and then I can also add a standing R1 if he goes for the overhead slash right after, but after that it is dangerous because he can do the spinning slash right after the overhead and fuck me up.

I can only think of one of his horizontal swings that doesn't go low enough to hit the recovery of a jump attack.
But then again, depending on your build you might only have to land about 3 of those so its worth the gamble even if you get hit.

When people ask for help they usually aren't cheesing the boss with an ashen summon to draw its attention while they attack them from behind.
I fucking hate Elden Ring's combat, but even I admit that Maliketh is the most fair and reasonable boss in the game. Good balance between hard but fair, like Pontiff. Almost none of the late game bosses are like him.
I beat him solo though? The attack he does where he stands up slightly and slams his sword down is hugely punishable

Experiment with crouching and jumping attacks, you'll find a lot of openings
You use your pulley crossbow to inflict poison and scarlet rot, then you sit back and enjoy his dance number until he croaks.
I found his first phase to be fucking annoying because he just runs away and throws his shit at you. Second phase was much easier for me.
Elden Ring bosses feel like scrapped Sekiro bosses. They're all designed to beat on you forever because in Sekiro you turn timed deflects into offense by building posture. But they took out the deflect mechanic without dropping the boss aggro in response, so now you're just stuck waiting for the anime combos to end but can't do anything
You said that as if windows for challenging bosses in any souls have ever allowed you to do more than 2 attacks before having to reposition yourself again.
Being able to string 3 attacks or more in a row is the exception, not the rule.
At this rate From will make Monster Hutner with how much they're getting used to reuse the same skeletons and animations over and over.
But at least I get 1-2 cool armor and weapon sets in MH. Killing Foreskin fuckers 7 times only gives you a couple weapons and some spell.
Challenging bosses in previous souls games let you punish way more frequently. You may not have been able to get more than 2 attacks at once, but you could attack way more often. The "feature" of "you're only allowed to attack once every like 5 combos because you need to wait for the one (1) fucking move out of everything he does which doesn't have a follow up that comes out faster than your weapon finishes swinging" boss design was very much the strong exception, not the rule like it is in ER
Even then, it is a hard fight to do full melee with no gimmicks.
I did it yesterday on NG+ with a regular straight sword only build, that attack you spoke off is the most conventional opening he leaves, and even then, you're expected to attack him while he is bringing his sword down, not after, because he immediately recovers and either moves away of hits you back.
I was using magic on the first time and it was a lot easier.
By the way, it feels like everything in the game past the mid point is much harder if you're using just a normal straight sword, the enemies are either so tanky that your so-so damage doesn't even faze them, or so fast that your so-so reach isn't enough to capitalize on anything.
Its like you're either supposed to go around dualwielding skyscrappers or the bleedy katana with the weapon art that covers most of the screen, or magic, though the last one is weaker.

The way damage and scaling in this game are balanced, you're supposed to treat small weapons like that as temporary placeholders until you find a weapon that upgrades with somber smithing stones. Small weapons have their performance drop off a cliff by the time you reach Leyndell, at which point they're only good for being sticks to apply status effects with. Elden Ring is the first game From game where it feels like if you're not playing with something from the list of pve """meta""" weapons/builds, you are objectively playing the game wrong.

You can actually attack mid combos in several bosses by using the right move. As the user showed previously against crucible knight, "let me solo her" shows with Malenia or other webms with Maliketh or Mogh, the tight hitboxes and sweeps means many times you can dodge 1-2 moves thanks to the recovery frames or the motion of the move itself. Not only that, but this is clearly intentional since discovering and abusing these means you get to spam posture breaks more often.
I will sound sarcastic now but it's a legit observation but, have you considered that Souls games aren't made with the idea that you're gonna use the same tool every single time, that's something you as a player arbitrarely decide. You're given all kinds of weapons, spells, items and tools for every build, you should be playing around with them for each boss. Some bosses are too spastic to be fought with slow weapons, some have weak posture, some are strong against status. It's up to you to find the best/funniest way to deal with it. I mean, you yourself said it, "Straight sword only", you are limiting yourself to a single tool and expecting it to work for all situations. Maybe that worked in past souls games, but there isn't a "soul" in the title, nor that was ever a staple, jsut something you could do.
The moment I stopped obsessing over the same weapon the game became much more viable. There's always some way to make my build work.
Don't feel surprised that the game becomes hard or tedious when you're going against the principle of the player. Challenge runs are called that way for a reason.

There are a ton of better designed bossfights in the game, Including Godfrey in the endgame.
LMSH' Malenia kill was unbelievably passive, he stood back and let her flail around for literally minutes at a time (especially in phase 2), refusing to engage until she did the one attack he could punish with a jumping L2 without fear of being hit by a follow up while trapped in recovery. Yes, certain moves can be ducked under if you jumping attack into them, but you don't know they're coming in advance so jump attacking into the boss is always risking a trade (they could do the bad attack instead of a good attack). And for bosses like Malenia, even if the jumping attack is safe, the follow up may not be, and it also may come out so fast you get hit because your recovery isn't over. LMSH is actually a perfect example of how hilariously passive you have to play a lot of these endgame bosses if you can't unga bunga trade hits to death and still win for whatever reason.

I’m glad to see I’m not the only one having the same experience with ER’s combat. I never felt weaker than in this game. Maybe it’s intended? It’s not as fun, at least for me.
LMSH also fights a version with thrice the healthbar and an intentionally suboptimal build. The example was to showcase you can understand a boss to the point you can joke and play in unconventional ways around her. There's a fuckton of videos of people rushing her so fast she can't even do anything in phase 2.
Keep in mind that, on release, people though Malenia's waterfowl could not be dodged or stopped in any way, and would always hit you, and now we know that's not true and, jsut like it's always been, there's some angles you can dodge/run/jump and get out nonchalantly.
I will aknowledge that the way trading hits is done in ER and souls in general is quite poor, specially after replaying Cidners mod after ER, but I can also tell people are overblowing ER's difficulty and bullshit way too much because they'd rather complain they can't comfortably beat the boss using their weaponfu, ignoring the other +200 tools.
Yes the only issue I have with Maliketh is that he does a shitton of damage but can't take it either, so a lot of people end up going yolo hoping to land some hits and not get killed in the process, get a lucky stagger and kill him immediately.

I kind of wish they would go back to the old Souls combat, slower and full of footsies, rolling was there and it was useful, but you could reliably fight most enemies and bosses without needing it, or relying on your trusty shield a bit more.

Everything after DS2, yes. Elden Ring is a good game, but the problem is - it has DS2 estus chugging speed, but DS3 bosses. So for my next run I will pick sorcerer and just keep my distance.
Also, I got both illusory rings in Scholar with 3 ADP, and you know how rolling is with 3 ADP. Will always prefer shields over rolling.

Use healing, your character is "frozen" at least a second after it.
Bosses have input read and use it to attack you the moment you press the button.
LMSH fights her with a pair of bleed and frost katanas on a RL180 arcane build in NG, you can't get more optimal than that. His armor is a meme but she kills you in 3 hits regardless of your head so it doesn't end up mattering. The inflated HP pool in coop makes the fight last longer, but that's not the point I was trying to make. The point I was trying to make is how he demonstrates that attacking only in the guaranteed-safe opportunities (as opposed to opportunities which are RNG dependent with respect to her possibly using an unavoidable follow up during your attack recovery) immediately renders 90% of her moveset a time waster because you can do nothing but wait for her to do one of the other 10% of moves. A lot of bosses are like that.

Maliketh has a dedicated parry item and cannot hit you up close.
Morgot/Margit have big windows to abuse.
Hoarah Loux has some attacks so slow or easy to dodge you can punish him considerably.
Mogh's main issue is the fire on the ground, his attacks are surprisingly easy to dodge and punish.
Outside duo bosses who don't apply for obvious RNG reasons, I don't feel any boss is bullshit or hard to punish outside colossal weapons, in which case they compensate by having huge psoture break. And people keeps finding ways to fuck Malenia.
