I agree, but it's kind of hard to judge until we actually see Shez and how they behave throughout the story. Byleth is iconic for FE while Shez is a newcomer to the scene.

It could very well be just because Shez might get to S-rank/romance Byleth at some point, so they had to give such an option to players. But yeah, I also think there will be parts of the game where we will get to play as them again.

First, she did not "keep them around", she went to a clandestine war throughout Fodlan to root them. And even if she "kept them around" for some time, it's called practicality, user.
Why get rid off something if you can use them and then dispose of them? Outside of potentially being risky, there is nothing wrong about using the Slithers just as they used her and other girls like Lysi before killing them off once and for all.

Byleth is weird, a lot of people like them, but at the same time they get a lot of shit for being a mute blank slate with no personality that can't even be customized to compensate. I think even the people who like them can concede to this. Maybe they took the criticism too hard (Byleth themselves was a reaction to Corrin having too much character to self-insert into and having a bad character at that) and wanted to return to the old "MU can talk and has personality" style of before but realized if they want to do that in a game that takes place in 3H's setting, they can't really erase Byleth.
I think for the most part, people see the MUs as their own character, whether you can customize them or not and whether they have a personality or not. Some people self-insert, but Byleth to most people is as much a character as the three lords and it's not like that's wrong. If there's romance in the game I could some people seething internally at the idea of Shez stealing waifus/husbandos that Byleth (or another super favorite character) married in 3H.

What I've realized is that the people who complain, are actually just a really loud minority of people. Of of those complainers, most of them are just "internet celebrities" that have no real sway on public opinion. Also all of the complaints came from Westerners, as nips actually like Byleth. I also think so. In fact, I'd kind of wish there was some way to tell just how many people self-insert and how many consider characters ingame as their own entity.
Especially when there are varying degrees of personalizable MCs, ranging from complete cardboards (e.g. Bethesda games), Byleth-like characters, through semi-established characters (e.g. Awakening, Fates), to established characters with customization options (e.g. Mass Effect).

To be fair, this kind of behaviour is a bit insane. I get where they might be coming from, but it's an alternative history/universe/path, so if you love the characters that exist in the story, what is the problem with accepting that they might have fallen in love with someone else?

Unlike Byleth who the lords see as a friend and teacher, they’ll see Shez as the new guy with the Byleth obsession.

In all honesty in the cases of all three lords it would be a tall order to have Shez really hit it off with them, some more so than others. In the case of Edelgard its actually easier Shez just has to save her life one time. But the fact that Shez is also a seething Manleth might make her dislike him.
With Claude, no way, as the reason why Claude even started getting close to Byleth is because he recognized their potential high status. Ditto for Dimitri who got closer to Byleth because Byleth pushed him to not focus on revenge. In fact, if anything Shez would have a negative effect on Dimitri, due to their grudge against Byleth for killing them. And Shez letting go of their grudge would mean Shez accepting their fate.
