That was the trend in the late 2000s. Everyone was big on having the least amount of UI as possible and if you did have to have UI then have it be part of the game world, e.g. Dead Space.

Consistency in UI elements IS bad when every single one of these options is meant to be used rapidly. You're not meant to be looking at them like it's a fucking book, they're snap selected when you're killing enemies. If you can't tell which is which within a ten-frame window, the UI has failed.

Dark letters on white background? Or bright letters on dark background? This counts too, and people do care about it. There are a lot of things to be annoyed by in ER and how little customization for the experience there is.
