None of the other bosses OP mentioned would ever require outside material (or hours and hours of random experimentation) to learn how to deal with any move. They're all properly telegraphed through consistent animation work.
I love KHIIFM, so I'm no stranger to "just let me see how to deal with that shit on youtube" being a part of the boss grind, and because of that I still think Malenia is a great boss, but it is a departure from their usual method of designing challenging bosses, that basically tied the image of "tough but fair" to their company.
There's nothing fair about a move with such specific counters or dodge timings that nobody could possibly do it on reaction without previous knowledge. The challenge becomes fair after you learn how to deal with the moveset, not while you learn.

Elden rings main flaw is doing nothing with the simplistic souls combat like sekiro and to a lesser extent bloodborne did. They made the bosses bullshit on purpose because they knew with the open world formula you could break the game with certain builds, so if you aren't playing cheaply, the expect you to summon and use spirit summons to deal with these bosses that read inputs and have RNG punishes so you are rarely fully safe. those are your options, break the game with muh lazer builds and shit or play it like a souls game and summon to fuck their agro and ruin the gameplay. Do not expect boss fights to have any substance, you you go in trying to memorize the patterns or whatever you are playing elden ring wrong.
Elden ring is boring. you discover stuff and most of if it useless to you, the gameplay is bland, it offers nothing new. I haven't played it in a month, losing interest at the capital after 40 hours.

The vast majority of people will NEVER rate a boss 10\10 if they have spent like 5+ hours on it.

Friede is a 10/10 and I died to her the most out every fromsoftware game. Elden Ring bosses are just mostly shit.
Well it works the same the other way around, if it only takes you a few tries to beat a boss it obviously didn't have enough depth to be a challenge, in fact I'd say having fought a boss multiple times gives you a much better understanding of it and thus a more objective outlook on it

Malenia is the only one that is actually in her own "superboss" tier, and she's well designed as a superboss. 1v1 with a plain greatsword, she's a fantastic fight.

Friede is one of the worst bosses ever desgined by FromSoft strictly because of Phase 2.
No boss has taken me that many tries. I would have to be running a truly awful build for that and would have realized that I need to change something long before then.

Nope, it took me 2 hours. But I hated sekiro and sped through it, was missing health, posture, and prosthetics when i fought him. Got the retard ending where sekiro kills himself and never touched the game again.
Those bosses have well considered movesets that cause the player to adapt until the fight becomes a rhythmic dance.
Malenia has a worse moveset than the Crucible knights (mini bosses) then does a retarded anime attack that heals her.

The issue with Malenia is that her moveset is wildly imbalanced in power, where Waterfowl is her only consistently considerably lethal move.
If we had that beta version of Waterfowl, no-one would really remember her that much, it feels like they overtuned Waterfowl to balance out the rest of her kit.
Which makes sense on paper, except it makes the boss more RNG dependant than bosses ought to be.
I've seen her use it only once or twice in a fight and I've seen her use it repeatedly in a fight and you can guess which fights end prematurely.
I think she would be a great fight without the stupid waterfowl dance. It forces you to play super passively because if you are mid-combo and she does it you are screwed unless u have bloodhound step.
