I just learned about it after looking into Dark Souls 3 cut content used in Elden Ring.
Luckily, From loves to recycle non used content so apparently those guys are putting in bonfire sacrifices and God's Grave (old Farron Keep) + the old world structure and time of the day

Is it a completely new game? Would I have to rebeat the bosses to access the new areas?
I'm not one of the mod authors so I don't know for certain, but from what he showed there's literal new areas and old areas are more "connected".
He also said there's some new bosses but he will keep the core the same, like a Dark Souls 3 if it had

The mod intends to restructure the world itself and replace the bosses and enemies accordingly, which is great.
You cant just restore alpha content, it would take more than restoring old assets, you would be making a whole new game. Much of what Miyazaki had to cut is not even available in anything other than some screenshoots.
God, imagine the copious amounts of porn that the Dancer of the Borreal Valley would have received had she remained a friendly NPC like in the alpha.

Convergence already did some of that
Profaned Capital was entirely translated and could theoretically be replaced. At this point the leakers know perfectly the progress route and the assets used

Not sure about the dragons in the sky thing. I think Zullie put out a video showing how those dragons shared the same model as the DS2 dragons, which suggests they were a placeholder for demoing the pilgrim butterflies, and the butterflies were always the intention

When was Dark Souls 3 remixed and why? I don't see what was gained out of the shuffled other than perhaps speeding up dev time, as everything bar the player determined bonfires sounds extremely compelling.
Despite everything DS3 still feels the most 'unfinished' of any Souls game to me.
DeS just had a cut level but everything else is good.
DS1 had some areas that could have used more work in the 2nd half, i.e Izalith, but pretty much everything is in-game.
DS2 once you ignore the lack of world connectivity is fine enough, I'd go as far to say the game likely improved once they changed directors, even with the loss of the lighting.
DS3 just doesn't feel right, like just take Untended Graves which always seemed to me like it should have had more importance placed on it, was the final level in the Alpha allegedly, is just tossed in as an optional area.
DS3 feels unfinshed because it is. Probably the most of all souls games.
A suppossed leak from a guy who worked on it said they had to scratch almsot half of the game due lack of time/resources, and the game is basically what was done glued togehter. Some Miyazaki itnerviews seem to back this up, aswell as the several times the maps made no sense or had places with other intentions. The msot noticeable one is the room where you fight Wolnir where there's an altar that does nothing at all and then the room has an exit to Irthryl because why not.

And the entire active apocalypse with the butterflies and the eclipse being confined to like 2 levels before suddenly being in the Dreg Heap in an extremely time separated post apocalypse before The Ringed City takes you even further in time post apocalypse.

The game had a very different mid game structure, which you can tell because Lothric Castle, Archdragon Peak and High Wall/Undead Settlement have much higher quality/porduction values

He's been seen in both Yhorm's arena and the Abyss Watchers arena.

Pontiff being the final boss is true but he would've been fought in a third version of Cemetary of Ash, the uncorrupted Champion Gundyr was always the boss of Untended Graves.
The third version of Cemetary would've linked to the actual Kiln of the First Flame from DS1.
The lore of Dark Souls 3's development is more interesting than the actual lore we get in game.
