I got 10 Rune Arcs in 15 minutes just from killing rats in Earthbore Cave and using the Silver Scarab/Foul Foot. I'd say if you already know the game by now in NG+ the amount of deaths would be miniscule and you could end up killing whatever boss you want for their Great Rune and moving on. Most of them are pointless though. Godrick's is probably the most well-rounded and the others have diminishing returns or trade off effects.

Godrick's is like 40 free levels and can help you wield weapons and spells you wouldn't otherwise without respeccing, allowing you to complete quests that require them and use spells temporarily.
Malenia's is rallying from Bloodborne. If you liked doing that there it works the same way here.
Radahn's is essentially a FAP ring.
Morgott's provides lots of extra health.
Rykard's restores HP upon defeating enemies. This stacks with other lifesteal abilities, like from the Great Stars or the Butchering Knife. Very handy for clearing small dungeons or legacy dungeons.
Mohg's is gravelording from Dark Souls 1. Upon invading, you get 3 temporary consumable Great Runes that provide you and any enemies nearby with the Lord of Blood's Exultation effect, boosting damage when blood loss occurs nearby. Also, if an enemy under the effect defeats a player, you get some of your health recovered. The difficult part here is actually getting enemies to attack the player when you invade.

yeah it doesn't make sense, though I suppose they'd be forced to give it bleed or poison or some shit to "justify" it. Why can't a weapon draw pure physical out of a non-physical stat, in this case the argument is that the weapon feels your intent "through the blood" and leans into your swings.

The game is weird about Arcane. The albanauric weapons do exactly as you describe (they all suck except staff and halberd), just scale highly with Arcane for physical damage and the reason being is Albanauric's descend from Silver Tears, which according to their mask have arcane properties.
Yet, the weapons made from the silver tear do not.
Likewise, Arcane scales highly with mohg's stuff based on nothing more than arcane carrying over status proc buffs and it being blood. But also I mean, Mohg is chilling in the place most associated with the stat.
Even more baffling is dragon, its only link to arcane is its seal, every dragon weapon in the game, and I mean dragon, not dragon cult, scales with faith.

I used it until I realized I liked the extra crit damage from the regular dagger more and just added bleed to it for my arcane build, which is honestly more of a parry build at this point because I'm getting addicted to parrying shit.
Maybe dragons are inherently arcane, but magma wyrm scale sword should have had arc scaling. The dragon communionist isn't going to stack str/fai.

I mean, the Samurai class starts with one of the most powerful non-somber weapons in the game. It's easy as shit to solo everything with a single Uchigatana and a second is immediately available in Limgrave.
The Bloodhound Fang was the game breaking weapon for my STR build. It is ludicrous how hard it hits and the bleed proc means massive spike damage on top of hitting like a truck. Combine that with reach and an insanely powerful Ash of War inbuilt and it's something that can carry you through the whole game.
