This isn't a bad thing. FromSoft is just a team of people who want an excuse to get across their cool designs/visions via an effective medium. Who cares? It's cool. These worlds aren't supposed to be novels, and are still games. Sometimes it's hard juggling game mechanic and game lore.

They ARE Albinaurics. "Albinauric" is a catchall term for homunculi, races created by human hands instead of created by the gods or evolved naturally.

The first generation of Albinaurics are humanoid, but their legs degrade over time and they become crippled. Latenna is a member of this generation.
The second generation of Albinaurics are the frogmen ayylmaos that inhabit the Academy Gate Town ruins and Mohgwin Palace. They like to cartwheel around.
An unknown generation of Albinaurics are the Oracle Envoys, who inhabit the ramparts of Leyndell and the Haligtree, dooting their horns for whatever special event is going on at the time.
