I don't know what useless stump you're talking about but in the case of giraffes they co-evolved with Acacia trees which were continuously selecting for taller and taller members of their own species to avoid having their leaves eaten by animals like giraffes. Giraffes then had an evolutionary arms race with the Acacia tree as the ones with longer necks were more likely to be able to eat the Acacia leaves and thus had a higher chance of survival. Repeat this process 4.4 million times and eventually you're going to end up with an animal with a really long neck.
Macro evolution is not a real term, it's a made-up thing for people like yourself that cannot put 2 and 2 together when seeing a plant or animal evolve in real time and then cannot understand why that would cause them to change drastically over the course of billions of years and trillions of generations.
