Ghost N Goblins the hardest by a considerable distance.
I've beaten 3 of them. I would pick Ghouls and Ghosts because I haven't beaten it and I think it might be the hardest.

DMC2 may be a shit game but it's also only 3 hours long and is braindead easy

Zelda 2 is objectively the easiest but it'll take the longest, and there's some bullshit you might miss without a guide. Final boss is just crouch in the corner and stab so there's little actual skill involved.
Castlevania is the quickest but can be pretty difficult in the final area. Ninja Gaiden 1 and Contra are too hard. Never played Ghost n Goblins.

Ninja Gaiden is the most fun game on that list but the final area is total bullshit where it sends you too far back each time you die. Ninja Gaiden 2 is just as fun but actually beatable in its final area since the final boss doesn't revive its previous forms if you die/game over to it.
Actually if you're allowed the konami code Contra is fine but I figured that would be cheating. NG1 is legitimate bullshit in the final area, even back when I played it on a real NES.
