2 and 3 are mostly direct upgrades, a few smaller issues were cleared up with patches, there's also the censorship shit but it's minute wheether or not you care is a personal thing.
1 is a mixed bag, the gameplay is much easier and smoother(i loved 1 regardless and think both are fine), lighting is fucked in multiple areas though, not as bad as the screen shots that get thrown around on here, but it's a noticeable downgrade even if we got a lot of nice changes with it.

I only played 2 out of the original, but I recently watched a video about how nerfed the AI is in the Legendary Edition. It's so braindead to the point where you don't have to think about using powers you just have to be on Legendary mode. It's nice to have all the games in 1 place, but you should get the individual games. They're a lot cheaper used.
