Tips on how to git gud at touhou? I only recently decided to actually try playing the games and 7 was the one that seemed easy to try and do a 1cc on but everything past stage 3 is destroying me.

Something you should know about most touhou stages, and especially PCB's 4th stage is that the bullets are aimed directly at your position, so just microtap to the left or right. There's also some enemies that shoot bullets on death so you can stop shooting to counteract that.
From there on out you should have enough bombs and lives to brute force the game on normal.

Keep playing and you'll get better at recognising patterns and the ways you have to deal with them. Some patterns have bullets aiming at you and as such can be dealt with by slowly moving around from one side to the screen, this is moreso crucial in Stage 4, which is full of that. Not moving much limits the spread of these bullets and the potential you have of cornering yourself.
Press Shift for Focused, slower movement that lets you see your hitbox, and never die with bombs in stock. It's quite difficult & contradictory in a way to do that as you'll just panic bomb everything that looks the slightest bit intimidating, so I recommend you train reacting to danger and trying to Press X as the bullet is about to hit you or just hitting you, that way you can pull a deathbomb: A mechanic that lets you bomb a few frames after you've been hit to save yourself. A reason why IN/8 is frequently recommended to newcomers is because it has a mechanic where you have roughly a second and a red flash before dying, letting you pull a more powerful bomb at the cost of two bombs. This technically eases the process of learning the game & trying to get through the spells even if you eventually die to them. But you'll do fine with 7.

You're aware of how easily the bosses can be cheesed in that, right? Especially the stage 4 and 5 ones. Activating hypers gives you i frames so you can point blank the boss a little for extra damage, and in the case of bosses with multiple parts like the bombs in Stage 5 or the satellite things in Stage 4, point blanking those parts clustered together will instantly recharge your hyper as soon as you activate it.
If you already knew this, then I guess I can't tell you much beyond use practice mode.

I downloaded some of these games and they you can tell there was little to no effort put behind them. It's just an excuse to have cute girls on the screen with shovelware included so it passes as a game. I never did that cheese actually, I only point blank bosses a little bit at the beginning. Hypers' iframes always felt pretty short to me so I never really made use of them aggressively.

Yeah, they last longer than what one may think, it's one of the barriers to gitting gud at DFK 1.5. Look at your sprite to get an idea of when they're active and when they'll wear off.

There are three types of patterns in Touhou. Learn how to deal with each.

Just memorize them. This is what practice is for. Also try to understand their trajectory.

Move very slowly so the attack just barely misses you while giving you enough room to keep dodging. Before you get to a corner, move quickly to create an opening.

Rely on reflexes. Press X when it gets unfair.

The truth is that SHMUPs aren't for everyone.
But you should still give one of the games a try some other time if you're still interested. I personally believe that Touhou 10 is one of the best places to start. It's piss-easy but only if you press X. Pressing X should be a habit if you want to win.

they are called "butterfly bullets"
in pcb they were some of the smallest bullets in the game and dodging them was very pleasant but zun smoked something and decided to turn them into soew bullets starting from ufo
just play reimu or make sure you're not even grazing the sprite of the bullets
